If you have a sweet tooth and would like to learn how to make traditional French pastries, this is a great start! This class will show you how to make éclairs and profiteroles filled with pastry cream, chocolate glaze, and a fruit tart with pastry cream.
During the first class you will learn how to prepare pâté à choux (classic French dough) used to make the éclairs and profiteroles, and pâte sucrée (sweetened, enriched short-flake crust) to make the fruit tart.
About the Instructor
Chef Maria "Mayte" Rueda and her son, Edwin, operate Mayte Sweets in downtown New Bern. The bakery sells Italian coffee, cakes, cookies, macarons, tarts, custards, cheesecakes, cream puffs, Charlotte cakes, and various other sweets - all made by Mayte. She earned her degree from the University of Hawaii and her Pastry Art degree from the August Escoffier School of Culinary Arts and the Italian Chef Academy in Rome. Her love of cooking and baking has been an asset to her family and the entire New Bern community.
