Our Biscotti Baking class will teach you how to make these decadent delights, whether you plan on sharing or enjoying them solo! Homemade biscotti is nothing like what you've tasted in a coffee shop or grocery store. Biscotti are a perfect ending to a great meal, especially with an espresso. You will love this sweet snack that's lower in fat and sugar than most cookies, and they are packed with heart-healthy nuts. Biscotti can be frozen and defrosted in the open air so none go to waste. They also make great gifts. Gather the friends and family for a get-together and enjoy a centuries-old Italian treat that you made yourself!

Biscotti, also known as cantucci, are Italian almond biscuits that originated in the Tuscan city of Pato. They are twice-baked, oblong, dry, and crunchy - perfect for dunking in beverages like warm milk, hot cocoa, coffee, or vin santo. Although biscotti has evolved over the years, it is still made with flour, sugar, eggs, salt, and nuts. Most recipes now include some leavening of baking powder and/or baking soda. Dating back to the days of Columbus, sailors would munch on biscotti as they had a long shelf life and were mold resistant due to the drying out from the second baking. These days, biscotti is a favorite sweet indulgence because it is easy to make, very satisfying, and relatively light.

About the Instructor

Alberta Novak is a personal chef who prepares customized, delicious meals for her on-the-go seniors, couples, singles, and families. Her amazing meals can be portioned so you can spend more time with your loved ones without the stress and mess, or frozen-for-later consumption. She also offers cooking lessons to groups and individuals. Alberta's love of food, cookery, and cooking has been her passion for as long as she can remember, and she is excited to share her gift through this class.

About the Community Enrichment Program

The Community Enrichment Program (CEP) at Craven Community College provides a diverse array of non-credit, short-term, and affordable courses. Classes are open to anyone who wants to keep learning while having fun! Topics offered are based on community input and range in skill levels from beginner to advanced. Classes can take place in one session or span several weeks. Please note: CEP classes cannot be used for credit toward any of our degree programs.
