If you have a sweet tooth and would like to learn how to make traditional French pastries, this is a great start! This class will show you how to make éclairs and profiteroles filled with pastry cream, chocolate glaze, and a fruit tart with pastry cream.

During the first class you will learn how to prepare pâté à choux (classic French dough) used to make the éclairs and profiteroles, and pâte sucrée (sweetened, enriched short-flake crust) to make the fruit tart.

About the Instructor

Chef Maria "Mayte" Rueda and her son, Edwin, operate Mayte Sweets in downtown New Bern. The bakery sells Italian coffee, cakes, cookies, macarons, tarts, custards, cheesecakes, cream puffs, Charlotte cakes, and various other sweets - all made by Mayte. She earned her degree from the University of Hawaii and her Pastry Art degree from the August Escoffier School of Culinary Arts and the Italian Chef Academy in Rome. Her love of cooking and baking has been an asset to her family and the entire New Bern community.

This course consists of 2 Monday evening classes. During the first class you will learn how to prepare Pâté à Choux (classic French dough) used to make the eclairs and profiteroles, and Pâte Sucree (sweetened enriched short-flake crust) to make the fruit tart. The Community Enrichment Program (CEP) at Craven Community College provides a diverse array of non-credit, short-term, and affordable courses. Classes are open to anyone who wants to keep learning while having fun! Topics offered are based on community input and range in skill levels from beginner to advanced. Classes can take place in one session or span several weeks. Please note: CEP classes cannot be used for credit toward any of our degree programs.
